Recently, Nerina completed her level 3 nutritional practitioner qualification and is now well on the way to completing level 4. “My motto is ‘let’s talk about food’ and I’m an avid believer of ‘you are what you eat’ and how foods can affect and lift moods”, Nerina told us.

“Not only can I cook delicious dishes but dishes that use foods that help us feel good!”, she added.

“I try to use these mood-boosting foods where possible in my recipes, particularly when working with health retreats or with clients recovering from health challenges”, Nerina told us.

“For example, the winter season is generally when quite a lot of us start to feel down, particularly if you live in the UK or other northern European countries – for this is look to use feel-good foods such as oily fish, dark chocolate, walnuts, bananas, eggs, chicken, turkey, beans & lentils.”

“One of my all-time favourite dishes is roasted beetroot and carrot. Carrots are a good source of vitamin A & beetroots help your heart and lungs to work better during exercise, the nitric oxide from beets increases blood flow to your muscles. Also, I add a drizzle of extra virgin olive oil which can help increase the good cholesterol.”

“As a Sunday treat, I baked an orange cake – it’s a bit naughty but I balanced it out using whole oranges as a source of vitamin C.”
