This quick & easy dish is simple yet satisfying and is perfect for the cool start to the year. This recipe serves 6 and takes approximately 40 minutes to prepare and cook. Here’s our recipe on how to make it.
INGREDIENTS
• 600g gnocchi
• 125g mozzarella (try and find the small balls to save time cutting)
• 120g diced chorizo
• 2 x 400g cans of chopped tomatoes
• 1 white onion finely diced
• 2 garlic cloves, crushed (or two teaspoons of minced garlic)
• A few fresh basil leaves
• Salt & pepper to taste
METHOD
Bring the olive oil to temperature in a frying pan over medium/high heat. Fry onions and garlic until soft, then add diced chorizo and fry for a further 5 minutes.
Add both cans of chopped tomatoes along with a good pinch of salt and ground black pepper to taste. Bring to a simmer, then add gnocchi and cook on medium until soft. Preheat the oven grill on high.
Now stir in most of the mozzarella, basil leaves and spoon the contents of the frying pan into an oven dish. Top with remaining mozzarella and place in the oven on high until the mozzarella is melted and golden brown in colour.
Finish with a fresh crack of black pepper and remaining basil leaves. Serve on its own or with a fresh and light side salad.
