Aubergines, courgettes, onions and tomatoes are among the products that have increased most in price over the last year, according to the Canarian institute of statistics.

The average price of a kilo of aubergines in Canarian shops has risen from 78 cents to €1.28 over the last year. Onions, tomatoes, courgettes have also seen price rises of over 30%.

The price rises are especially bad news for anyone who enjoys pisto, the Spanish equivalent of ratatouille, which contains all four of the priciest ingredients. Even the fried egg which usually tops the dish has risen in price.

But it’s not all bad news for vegetarians – cabbages, papayas, pumpkin and oranges have all gone down in price since last year, although we can’t think of a recipe that combines these cheaper ingredients.
