The Lanzarote Cabildo has placed the promotion of local products at the centre of this year’s Salón Gourmets in Madrid. The official programme opened on Monday morning.

Lanzarote is attending the 2026 edition accompanied by local producers, primary sector associations, culinary experts and a broad representation of the service sector.

During the opening ceremony, Cabildo President Oswaldo Betancort emphasised how “Lanzarote and La Graciosa have come to understand that their cuisine is not merely a tourist attraction, but a key tool for economic development and social cohesion. We are here to show the world that behind every product lies landscape, tradition, and innovation, and that this combination is our greatest competitive advantage.”

For her part, the Minister of Economic Promotion, Nori Machín, stressed the importance of this international showcase, noting that “the Salón Gourmets allows us to consolidate relationships, open new markets, and strengthen the presence of our products in high-level circuits. Our strategy involves continuing to connect the primary sector with the restaurant industry and tourism, generating real opportunities for our professionals.”

The opening ceremony included the presentation of the stand’s programme titled “Lanzarote and its Gastronomy: A Strategy for the Local Economy and Landscape”, a roadmap that outlines the Cabildo’s initiatives.

In Monday’s programme was the presentation of the audiovisual piece “Recipes from the Traditional Cuisine of Lanzarote”, based on the work by Fefo Nieves published a few months ago by the Cabildo. The event featured a presentation by food journalist Fran Belín and was attended by the island’s leading authorities present at the fair.

In addition, the event also offered an opportunity to introduce some of the Lanzarote students in Madrid to the key strategies the Cabildo employs for promoting the island’s products and cuisine both domestically and internationally.

The Saborea Lanzarote schedule will continue today and Wednesday with a full programme of activities, tastings and presentations that will highlight the island’s culinary strengths.
