The El Gecko Veggie Diner, just off Playa Honda’s lively seafront, is a gem that is worth discovering whether you eat meat or not. To give you an idea of what’s on their vegetarian, vegan, and gluten-free menu, chef Jesus offers this recipe: 

Seitan in Red Wine

Seitan is a “vegetarian meat” based on traditional Chinese products. It’s succulent and tasty and extremely versatile. It’s also almost entirely made of gluten, so if you have an intolerance, stick to tofu. Seítan is sold at health food shops and is also stocked by Lidl.

Ingredients: For each person

300g  of seitan
Half a red onion
10g of brown sugar
2 tablespoons cane honey (miel de caña)
15 cl red wine
3 tablespons vinegar
2 tablespoons of brandy
Salt and pepper
Half a cup of water
15cl vegetable stock.

The sauce

Chop the onion finely and fry in a little olive oil in a hot pan. Add the brown sugar and just a few drops of water to help caramelize the sugar. Bring ito the boil and add 2 tablespoons of honey. Let it foam a little then add the wine and vinegar. Flambé with brandy, add the vegetable broth and let the sauce simmer until it thickens.

The seitan

Cut the seitan into medallion, season with salt and pepper and add a little olive oil. Grilled on both side until golden brown.

Place medallions directly on the plate and pour the red wine sauce on top to taste. Serve with white rice or French fries and salad.
