Sweet potatoes are a Lanzarote speciality. Two main varieties are available – the red ones with white flesh and a yellow variety with orange flesh. Either type are delicious prepared this way, a tasty snack or side dish.


– 6 sweet potatoes
– Half a lemon
– Limes
– Butter
– Black pepper


Squeeze the lemon into a saucepan of water, on high heat.

Peel and chop the sweet potato roughly, putting the pieces straight into the water.

Bring to boil and summer for 20 minutes, or until a fork pierces the potato chunks easily.

Remove sweet potatoes. Add lime juice, butter and plenty of freshly ground pepper, and mash.
