We’re bringing you another Spanish classic this time. Tortilla, arguably one of the simplest Spanish dishes to make. I’d bet my last penny that every visitor that has come to Spain has tried Tortilla at least once, and there’s good reason too! Delicious, tasty and simple.
– 1kg of potatoes
– Salt and pepper to taste
– 8 large eggs
– 1 onion
– Extra virgin olive oil
Firstly, take your potatoes, peel them and run them under cold water; after this, cut the potatoes into thin slices.
With kitchen roll, pat the potatoes dry and sprinkle salt and pepper over them.
In a large frying pan, add half an inch of oil and heat over medium-low heat until the oil is hot.
Once the oil is hot, add the potatoes and make sure they’re covered by the oil and cook them for 20 minutes on low heat.
Whilst they are cooking away, beat your eggs in a bowl and season.
Now, take your onion and slice it as thin as possible, and fry on low heat in a separate pan for about 10-15 minutes until soft.
Once soft, drain out the oil and put the onions into the bowl with the egg.
When your potatoes are done, drain the oil and pat them dry, and add them to the bowl with your egg and onion. Let sit for 20 minutes.
In the original pan, add your mixture back into it and keep on medium-low heat. Cook the eggs for 6-8 minutes on each side.
Finally, take the tortilla and place it on a plate and let it cool for 5-10 minutes.
