Is there anything more Halloween, then pumpkins? And what’s the first dish that comes to mind when you think of pumpkins? Pumpkin Soup! Whip-up this easy to make Pumpkin Soup recipe to warm you up on cool Autumn nights.
– 4 tbsp olive oil
– 2 Onions, finely chopped
– 1kg pumpkin, pealed, deseeded and in chunks
– 700ml chicken or vegetable stock
– 150ml double cream
– 4 sliced wholegrain bread
– Handful of pumpkin seeds
Heat 2 tbsp olive oil in a large saucepan, then cook 2 finely chopped onions until soft.
Add your chunks of Pumpkin to the pan, then carry on cooking until they become soft and golden.
Pour 700ml vegetable or chicken stock into the pan, then simmer for 10 mins.
Pour 150ml double cream into the pan, bring back to the boil, then purée with a blender.
To make the croutons:
Heat 2 tbsp olive oil in a frying pan, then fry the bread until crisp.
Why not add a handful of pumpkin seeds to the pan for extra flavour? Toast for 5-10 minutes.
Add salt and pepper to taste.
