This summer’s sweet figs are now arriving in some shops, marking one of the highlights of the Canarian culinary year.

In May and June, you may have already seen larger figs, called brevas, on sale. These are the first crop of the fig tree and the fruit, although tasty, is nowhere near as sweet and flavoursome as the higos de leche that are now appearing and will be available for a couple of months.

Tenderest when green, these figs have a beautiful rose-coloured interior, and gradually become a reddish-purple colour as the summer progresses.

You can peel them if you like, but it’s a tricky business. Much better to just wash them, cut the stem off, pop the whole thing into your mouth and be transported to heaven.
