Warm or cold, these delicious pastries are a must-try for keen bakers. Whether they’re to be eaten straight away, chilled for later on or frozen, Cinnamon Rolls are perfect for any occasion. I can’t think of anything better, to start your morning, than a hot cup of coffee with a warm roll. Simply irresistible!


– 300g self-raising flour
– 4 tbsp caster sugar
– 2 tsp ground cinnamon
– 100g butter
– 2 egg yolks
– 200ml milk
– 55g brown sugar
– 1 and 1/2 tbsp butter
– 60g icing sugar
– 1 tbsp cream cheese
– 1/2 tsp vanilla essence


Heat oven to 180C/fan 160C/gas mark 4.

Grease a loose-bottomed cake tin and line baking parchment.

Mix the flour, 2 tbsp caster sugar and 1 tsp cinnamon together, with a pinch of salt in a bowl. 

Combine the butter, egg yolks and milk together and combine with the dry ingredients to make a soft dough.

Place onto a floured surface and roll out to a rectangle.

Mix together, remaining cinnamon, brown sugar, remaining caster sugar and 1tbsp of melted butter.

Spread evenly over the dough then roll it, like a Swiss roll.

Using a sharp knife, cut the dough into even slices and put into the prepared tin.

Brush gently with milk and bake for 30 mins, or until golden brown.

Remove from the oven and let cool.

Sift the icing sugar into a large bowl, make a well in the centre. Place the cream cheese and butter in the centre, pour 2 tbsp boiling water, and stir.

Add more water until you have a drizzly consistency.

Stir in the vanilla essence, then drizzle the icing over the rolls.

Serve warm or cold.
