Love the Season


The sooner you start planning Christmas food, the easier things will be. If you want a traditional British or Irish spread, you need to start planning now, but don’t forget that on an island like Lanzarote there are plenty of other delicious Christmas traditional delicacies from Spain or other European countries that are just waiting to be discovered. Traditions are, after all, things we invent ourselves, as well as inherit. Christmas is about nostalgia and comfort, but it’s also about the exciting and the tantalising. On Lanzarote, you can have the best of all worlds, served up on a plate.

A turkey is the centre piece of most Christmas tables, so make sure you get your order in early. But if you prefer goose or even just a good old roast chicken, nothing’s stopping you. The key is in the trimmings.

Make your own Eggnog

12 Large Eggs, separated
1 1/2 cups Superfine Sugar
1 quart Whole Milk
1 1/2 quarts Heavy Cream
3 cups Bourbon
1/2 cup Dark Rum
2 cups Cognac
Freshly grated Nutmeg

1. In a very large bowl, beat egg yolks until thick and pale yellow. Gradually add sugar to yolks. With a wire whisk, beat in milk and 1 quart cream. Add bourbon, rum and cognac, stirring constantly.

2. Just before serving, beat egg whites until stiff. Fold into mixture. Whip remaining heavy cream until stiff and fold in. Sprinkle with nutmeg.
